Main Ingredients

  • 4 pieces slightly firm avocados Choose avocados that yield slightly to gentle pressure.
  • 3 pieces eggs These will act as the binder.
  • 1/2 cup flour Can substitute with chickpea or rice flour for gluten-free.
  • 1 cup panko breadcrumbs For a lighter, airier texture.

Seasoning

  • 1 Tablespoon Italian seasoning Feel free to substitute with favorite herbs.
  • 1 teaspoon garlic powder Fresh minced garlic can be used for a stronger flavor.
  • 1 teaspoon salt Essential for enhancing flavor.

Instructions
 

Preparation

  • Slice the avocados in half lengthwise, carefully remove the pits, and scoop out the flesh.
  • Cut each half into equal wedges, about 6 to 8 wedges per avocado.
  • In a shallow dish, whisk together the eggs until combined.
  • In another dish, place the flour.
  • In a third dish, combine the panko, Italian seasoning, garlic powder, and salt.

Breading

  • Dip each avocado wedge into the flour, tapping off excess, then into the beaten egg, and finally into the panko mixture for even coating.
  • Repeat until all wedges are breaded.

Cooking

  • Arrange the coated avocado wedges in the air fryer basket in a single layer. Spray with olive oil.
  • Set air fryer to 360°F (180°C) and cook for 5-7 minutes until golden, then flip and cook for another 5-7 minutes.

Notes

Serve with lime dipping sauce, spicy chipotle mayo, or make a colorful salad. Leftovers can be stored in the refrigerator for up to 2 days or frozen, but texture may change.
