  • 15 oz Chickpeas (drained and dried) Dried chickpeas work beautifully if soaked overnight.
  • 2 cups Parsley Fresh parsley adds brightness.
  • 1 cup Cilantro Brings a fragrant zest.
  • 1/4 cup Onion (chopped) Yellow or red both work well.
  • 1/2 tbsp Garlic (minced) Essential for flavor.
  • 1 tsp Cumin Ground spice for depth.
  • 1 tsp Salt Essential for flavor enhancement.
  • 1/4 tsp Pepper Dash of black pepper.
  • 1 small Jalapeño (seeded and diced, optional) For a mild kick.
  • 1 tsp Baking Soda Helps achieve a light texture.
  • 1/4 cup Flour All-purpose or chickpea flour.

Instructions
 

Preparation

  • In your food processor, combine the chickpeas, parsley, cilantro, onion, garlic, cumin, salt, pepper, jalapeño (if using), and baking soda. Pulse until you have a smooth yet slightly textured mixture—about a minute.
  • Transfer this mixture to a medium bowl and stir in the flour.
  • Scoop about 2 tablespoons of the mixture and shape into small balls.
  • Place the falafel in the air fryer basket, leaving space between them.
  • Cook at 350°F (175°C) for 7 minutes, then flip and cook for an additional 5-7 minutes until golden and crispy.

Notes

Store leftovers in an airtight container for up to three days. Freeze raw falafel for longer storage before cooking.
