Main Ingredients

  • 100 grams Makhana (Fox Nuts) If hard to find, substitute with popped corn for a looser texture.
  • 100 grams Almonds Try using walnuts instead for a more earthy taste.
  • 100 grams Cashews If nut-free, seeds or roasted chickpeas can work as substitutes.

Spices and Seasoning

  • 2 teaspoons Ghee Coconut oil is a suitable alternative for a plant-based version.
  • 1 teaspoon Mustard Seeds Sesame seeds can be used for a milder option.
  • 2 sprigs Curry Leaves Dried leaves are a good substitute.
  • 2 teaspoons Chaat Masala Adjust quantity based on spice preference.
  • 1/2 teaspoon Turmeric Powder A pinch of cayenne can deepen the spice profile.
  • 1/2 teaspoon Salt Flavored salts like smoked salt can add an interesting twist.

Instructions
 

Preparation

  • Preheat your air fryer to 180°C for about 3 minutes.
  • Air fry the Makhana at 180°C for 6 minutes.
  • Remove the Makhana and air fry the almonds and cashews for another 6 minutes, shaking them halfway.
  • In a Kadhai, heat ghee and add mustard seeds until they splutter.
  • Add curry leaves, chaat masala, turmeric powder, and salt. Sauté for about 10 seconds.
  • Combine roasted Makhana and nuts with the spice mix, tossing until evenly coated.
  • Turn off the flame and allow the mixture to cool completely before storing.

Notes

Store in an airtight jar for up to a week at room temperature. Keep away from moisture to maintain crunch.
