Seasoning and Toppings

  • 2 tablespoons olive oil Helps seasonings stick and promotes browning.
  • 1 tablespoon Italian seasoning A blend of herbs that enhances flavor.
  • 1 tablespoon grated parmesan cheese Adds a salty, nutty finish. Nutritional yeast can be used as a substitute.

Preparation

  • Wash and chop the vegetables into bite-sized pieces.
  • In a medium-sized bowl, combine the broccoli, bell pepper, mushrooms, zucchini, and yellow squash.
  • Drizzle with olive oil, sprinkle with Italian seasoning, and toss until evenly coated.
  • Preheat your air fryer to 390°F.

Cooking

  • Place the seasoned vegetables in the air fryer basket in a single layer.
  • Cook for 5 minutes, then open the air fryer and toss the vegetables gently.
  • Continue cooking for an additional 5 minutes or until the vegetables reach the desired tenderness.
  • Sprinkle with parmesan cheese before serving.

Notes

Serve these air-fried veggies with grilled chicken or fish, or mix them into a grain bowl. They keep well in the fridge and can be reheated in the microwave or air fryer.
