For the mushrooms

  • 20 large mushrooms Cremini or button mushrooms work well; must be fresh and plump.

Preparation

  • Clean the mushrooms by wiping them with a damp cloth and remove the stems to create little cups.
  • In a large bowl, mix cream cheese, Parmesan cheese, breadcrumbs, minced garlic, chopped parsley, and season with salt and pepper until well combined.
  • Stuff each mushroom cap generously with the mixture.

Baking

  • Arrange the stuffed mushrooms on a baking sheet and drizzle with olive oil.
  • Bake for 20-25 minutes or until tender and golden.
