Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1/2 cup granulated sugar Can substitute with coconut sugar.
  • 1 tablespoon baking powder Ensure it’s fresh for best results.
  • 1/2 teaspoon salt Enhances flavors.

Wet Ingredients

  • 1/2 cup unsalted butter, softened Can substitute with coconut oil.
  • 1/2 cup cream cheese, softened Neufchâtel can be used for a lighter option.
  • 2 large eggs Best at room temperature.
  • 1 teaspoon vanilla extract Adds warmth and aroma.
  • 1/2 cup milk Almond or oat milk can be used.

Fruits

  • 1 1/2 cups fresh blueberries Toss frozen blueberries in flour to prevent sinking.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  • In a large bowl, mix together the flour, sugar, baking powder, and salt until combined.
  • In another bowl, beat together the softened butter and cream cheese until smooth. Add the eggs and vanilla, and blend until creamy. Gradually pour in the milk, stirring until well incorporated.
  • Combine the wet ingredients with the dry ingredients until just mixed, taking care not to over-mix to ensure a light loaf.
  • Gently fold in the blueberries.
  • Pour the batter into the prepared loaf pan and sprinkle some sugar on top if desired.

Baking

  • Bake for 60-65 minutes or until a toothpick inserted in the center comes out clean.
  • Let cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

Notes

Enjoy the bread sliced fresh, with butter, or toasted. Can be paired with coffee or tea. Store leftovers in an airtight container at room temperature for up to two days, or refrigerate for up to a week. Freeze slices for up to three months.
