  • 1 pound large peeled and deveined shrimp Use fresh shrimp for the best flavor.
  • 14 ounces sliced pork or chicken sausage Smoked varieties add excellent flavor.
  • 2 pieces zucchini, sliced Adds mild sweetness.
  • 2 pieces yellow squash, sliced Soaks up spices beautifully.
  • ½ cup asparagus, chopped Offers tenderness and freshness.

  • 2 tablespoons Cajun seasoning A blend of paprika, cayenne, and garlic powder.

Preparation

  • In a large bowl, combine the shrimp, sausage, zucchini, yellow squash, asparagus, bell peppers, a sprinkle of salt and pepper, olive oil, and your Cajun seasoning. Gently toss until every piece is well coated.
  • Heat a large skillet over medium-high heat, and once hot, add the mixed ingredients into the skillet.

Cooking

  • Cook for about 5-7 minutes, stirring occasionally, until the shrimp turns pink and the vegetables have softened but still hold their shape.
  • Remove the skillet from the heat. If you’re feeling fancy, garnish with freshly chopped parsley before serving.

Notes

Serve immediately out of the skillet for a rustic feel, alongside crusty bread, rice, or quinoa. Store leftovers in an airtight container in the refrigerator for up to three days, or freeze for up to a month.
