Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Key for rich flavor and perfect texture.
  • 1 cup granulated sugar

  • 2 cups semi-sweet chocolate chips Can substitute with dark or white chocolate.

For the Cheesecake Filling

  • 8 oz cream cheese, softened Provides the creamy filling.
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract Adds flavor to the filling.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  • Cream together the softened butter, granulated sugar, and brown sugar in a large bowl until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
  • In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  • Gradually mix the dry ingredients into your wet mixture until just combined.
  • Fold in the chocolate chips.
  • In a small bowl, whip together the cream cheese, powdered sugar, and vanilla extract until smooth.
  • Scoop about 2 tablespoons of cookie dough and flatten it into a disc. Add 1 teaspoon of the cream cheese mixture in the center and wrap the dough around it, sealing it completely.
  • Place the stuffed cookies on the prepared baking sheets, spaced about 2 inches apart.

Baking

  • Bake for 12-15 minutes, or until golden brown. Let them cool on the baking sheet for about 5 minutes before transferring to a wire rack.

Notes

Serve warm with vanilla ice cream or whipped cream, and optionally drizzle with chocolate sauce. Store leftovers in an airtight container for up to a week. Freeze them by layering with parchment paper for longer storage.
