For the Sandwiches

  • 4 slices bread Ciabatta or whole grain recommended.
  • 2 tablespoons garlic butter Use homemade or store-bought.
  • 1 cup prepared Caesar salad Store-bought or homemade, dressing is key.
  • 1/2 cup grated Parmesan cheese Aged Parmesan adds nuttiness.

Instructions
 

Preparation

  • Season chicken breasts generously with salt and pepper on both sides.
  • Coat the chicken in breadcrumbs, pressing lightly so they adhere.

Cooking

  • In a skillet over medium heat, add olive oil and heat until shimmering.
  • Cook the chicken for about 6-7 minutes per side, until golden brown and cooked through to an internal temperature of 165°F.
  • While the chicken cooks, spread garlic butter on one side of each bread slice and toast in a separate pan until golden brown.
  • Let the chicken rest for about 5 minutes before slicing.

Assembly

  • Assemble the sandwiches by layering the toasted bread with sliced chicken, a generous scoop of Caesar salad, and a sprinkling of Parmesan cheese.

Notes
