Ingredients
  

Main Ingredients

  • 1 lb Ground beef About 1 pound
  • 1 small Onion, diced
  • 2 to 3 cloves Garlic, minced
  • 1 packet Taco seasoning Or 2 tablespoons homemade
  • 1 can Diced tomatoes (14.5 oz)
  • 1 can Black beans, drained and rinsed
  • 1 can Pinto beans, drained and rinsed
  • 1 can Corn, drained Or 1 and a half cups frozen
  • 3 to 4 cups Beef broth
  • 4 oz Cream cheese, softened
  • 1 to 1.5 cups Shredded cheddar Plus extra for topping
  • Salt and pepper As needed

  • Tortilla chips Optional
  • Jalapenos Optional

Preparation

  • In a big pot, cook the ground beef with the onion. Break it up as it browns. When the beef is cooked through, drain off extra grease if you have a lot.
  • Add garlic and taco seasoning. Stir for about 30 seconds so it wakes up and smells good.
  • Pour in diced tomatoes, beans, corn, and beef broth. Stir it all together and bring it to a gentle simmer. Let it cook about 10 to 15 minutes to let the flavors meld.
  • Turn the heat to low. Add the cream cheese in chunks. Stir until it melts in.
  • Add the shredded cheddar and stir until melted. Taste and add salt and pepper if needed.
  • Serve hot with your favorite toppings.

Notes

For best results, always keep the heat low for dairy. Use beef broth for a richer flavor. If you want it thicker, let it simmer longer or adjust the broth amount.
