Preparation

  • Season the steaks generously with salt and pepper on both sides.
  • In a skillet over medium-high heat, warm the olive oil. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare, adjusting to your desired doneness.
  • Remove the steaks from the skillet and let them rest to allow the juices to redistribute.

Cooking

  • In the same skillet, reduce heat to medium and sauté minced garlic for about one minute until fragrant.
  • Pour in the heavy cream, stirring gently, and bring to a simmer.
  • Stir in the grated Parmesan cheese, allowing it to melt and thicken the sauce.

Serving

  • Slice the steaks against the grain, plate them, and spoon the creamy garlic sauce over the top.
  • Garnish with fresh parsley before serving.

Notes

For a lighter sauce, consider using half-and-half. If you have leftovers, store them in an airtight container in the fridge for up to three days or freeze for a month. Reheat slowly on the stove or in the oven.
