  • 2 pieces Whole wheat wraps Spinach or herb wraps can be used for added flavor.

Filling Ingredients

  • 1 cup Greek yogurt Full-fat for creaminess or low-fat for a lighter option.
  • 1 cup Cucumber, diced Diced finely for refreshing crunch.
  • 1 medium Tomato, diced Ripe and juicy; cherry tomatoes can be used for sweetness.
  • 1/4 medium Red onion, thinly sliced Soak in cold water if flavor is too strong.
  • 1/4 cup Feta cheese, crumbled For a vegan option, use nut-based feta or skip it.
  • 1 tablespoon Olive oil Cold-pressed extra virgin is best.
  • 1 tablespoon Lemon juice Freshly squeezed for bright acidity.
  • to taste Salt Use to enhance flavors.
  • to taste Pepper Use to enhance flavors.

Instructions
 

Preparation

  • In a bowl, combine Greek yogurt, diced cucumber, diced tomato, thinly sliced red onion, crumbled feta, olive oil, lemon juice, salt, and pepper. Mix gently until everything is well incorporated.
  • Lay out the whole wheat wraps on a clean surface. Spread the yogurt mixture evenly over each wrap, leaving a little space around the edges for rolling.
  • Roll each wrap tightly, tucking in the sides as you go to keep the filling secure. Once rolled, slice them in half.

Serving

  • These can be served immediately. If you've prepped them ahead of time, refrigerate for later.

Notes

Wraps can be stored in an airtight container in the fridge for up to three days. For the best crunch, consider keeping the filling separate until ready to eat.
