  • 4 fillets Salmon fillets Choose skin-on for extra crispiness or skinless for convenience.
  • 2 cups Fresh spinach Frozen spinach can be used; be sure to wring it out well.
  • 2 cloves Garlic, minced Garlic adds essential flavor to the dish.
  • 1 cup Heavy cream For a lighter option, substitute with half-and-half.
  • 1 cup Grated Parmesan cheese Pecorino Romano can be used as an alternative.
  • to taste Salt Season to preference.
  • to taste Pepper Season to preference.
  • as needed Olive oil or Butter Use both for added flavor when searing.

Preparation

  • Heat olive oil or butter in a skillet over medium heat.
  • Season salmon fillets with salt and pepper; add them to the skillet. Cook for 4-5 minutes on each side until cooked through. Remove and set aside.
  • In the same skillet, sauté minced garlic for 1-2 minutes.
  • Add fresh spinach; cook until wilted.
  • Pour in heavy cream, bring to a simmer, and stir in Parmesan until melted.
  • Return salmon to the skillet to warm through and coat with sauce.
  • Serve warm and enjoy!

Notes

For serving, pair with a crisp white wine and some lemony quinoa or a zesty salad. Leftovers can be stored for up to 2 days in the fridge and reheated gently on low heat.
