  • 1 bag Frozen Tater Tots These beauties are your crispy base.
  • 6 slices Bacon Classic pork bacon; turkey bacon or tempeh can be used.
  • 4 large Eggs Scramble them fluffy; egg whites can also substitute.
  • 1 cup Cheddar Cheese Sharp cheddar or other varieties like mozzarella or pepper jack can be used.
  • 2 stalks Green Onions Chives can be a good substitute.
  • 1 bottle Hot Sauce Optional for added heat.

Preparation

  • Preheat the oven to 425°F (220°C) and spread the tater tots out on a baking sheet, ensuring they have space to crisp up nicely.
  • Bake the tater tots according to package instructions for about 20-25 minutes, flipping halfway through.

Cooking

  • In a skillet over medium heat, lay out the bacon slices and cook until crispy, about 5-6 minutes per side.
  • Transfer the cooked bacon to a paper towel-lined plate to absorb excess grease.
  • Using the bacon grease, scramble the eggs over medium heat until fluffy, which takes about 3-4 minutes.

Assembly

  • Grab a deep bowl and layer with crispy tater tots, followed by scrambled eggs, crumbled bacon, and cheese.
  • Top with chopped green onions and a few dashes of hot sauce if desired. Serve immediately.

Notes

If you have leftovers, store in an airtight container in the fridge for up to three days and reheat on the stovetop or microwave. Great for meal prep with components stored separately.
