For the Chicken Rolls

  • 4 pieces Boneless, Skinless Chicken Breasts Flatten for even cooking.
  • 1 cup Ricotta Cheese Creamy and lower in fat.
  • 1/3 cup Grated Parmesan Cheese Optional, but enhances flavor.
  • 2 cups Fresh Spinach Can substitute with another green.
  • 1/4 cup Fresh Basil Fresh herbs enhance the dish.
  • 1/4 cup Fresh Parsley Fresh herbs enhance the dish.
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used.
  • to taste Salt Essential for flavor.
  • to taste Pepper Essential for flavor.
  • 1 cup Marinara Sauce Use homemade or store-bought.
  • 2 tablespoons Olive Oil For browning the chicken.
  • 1/2 teaspoon Crushed Red Pepper Flakes Optional for a spicy kick.
  • Toothpicks or Kitchen Twine To secure the rolls.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Lay a chicken breast between two pieces of plastic wrap and gently pound it flat.
  • In a bowl, mix together the ricotta, Parmesan, spinach, basil, parsley, garlic powder, salt, and pepper until well combined.
  • Scoop some of the herbed ricotta mixture onto each flattened chicken breast and roll it tightly, securing with toothpicks or kitchen twine.
  • In a large skillet, heat olive oil over medium-high heat and brown each chicken roll on all sides.
  • Pour marinara sauce into a baking dish and gently place the rolls atop the sauce, seam-side down.
  • Bake for 25-30 minutes, until the chicken is cooked through and moist.
  • Serve with an extra sprinkle of fresh herbs and remaining marinara sauce on the side.

Notes

Best served warm, potentially with a side salad or pasta. Store leftovers in an airtight container in the fridge for 3-4 days.
