Instructions
 

Preparation

  • Shred cooked chicken and place in a mixing bowl.
  • In a small bowl, whisk buffalo sauce, Greek yogurt, garlic powder, smoked paprika, salt, and black pepper until smooth.
  • Pour the buffalo-yogurt sauce over the shredded chicken, and mix thoroughly.
  • Warm tortillas in the microwave for 15-20 seconds.

Assembly and Cooking

  • Lay each tortilla flat; spoon buffalo chicken mixture in the center and sprinkle cheese on top.
  • Fold sides inwards, then roll tightly from the bottom.
  • Cook in a non-stick skillet, seam-side down, on medium heat until golden, about 1-2 minutes on each side.
  • Slice in half and serve warm.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in a skillet or microwave. Can be frozen before cooking for 2-3 months.
