  • 1 tablespoon olive oil To sauté the chorizo.
  • 1/4 cup water Optional, for a moister chorizo.

Preparation

  • In a large mixing bowl, combine the pound of ground pork with the homemade chorizo seasoning and white vinegar. Mix thoroughly with clean hands.
  • Add the olive oil to a large non-stick skillet and heat over medium-high heat.
  • Carefully add the pork mixture to the skillet, breaking it up into crumbles. Sauté for about 8 to 10 minutes.
  • If the meat looks dry, splash in a little water as needed.
  • Once the chorizo is browned and fragrant, remove it from the heat.

Notes

Store leftover chorizo in an airtight container in the fridge for up to 3-4 days or freeze for up to a month. Reheat gently with a splash of water or broth if needed. Avoid overmixing the meat to maintain texture.
