  • 1 lb Italian sausage Mild or spicy, your choice.
  • 1 medium onion Diced.
  • 2 medium carrots Diced.
  • 2 stalks celery Diced.
  • 2 cloves garlic Minced.
  • 2 cans white beans Drained and rinsed (cannellini or great northern).
  • 4 cups chicken broth Or vegetable broth.
  • 1 handful greens Such as spinach or kale.
  • 1 tbsp Italian seasoning Or a mix of oregano and basil.
  • to taste salt and pepper To taste.
  • 1 tbsp olive oil If sausage is lean.

Optional Garnishes

  • 1 squeeze lemon To serve.
  • to taste grated parmesan For serving.
  • to taste red pepper flakes For serving.

Cooking Steps

  • Start with a big pot over medium heat. Add the sausage and break it up with a spoon. Let it brown until you see some golden bits.
  • Add diced onion, carrots, and celery. Stir and let them soften for about 5 minutes.
  • Add garlic and stir for about 30 seconds until fragrant.
  • Pour in the broth and scrape the bottom of the pot to lift the flavorful browned bits.
  • Add the drained and rinsed white beans and your seasoning. Bring it to a gentle simmer and let it cook about 15 to 20 minutes.
  • Add greens at the end. Spinach wilts in a minute or two; kale takes about 5 minutes.
  • Taste and adjust seasoning if necessary, adding more salt, pepper, or a squeeze of lemon.

Notes

This soup makes great leftovers and can be frozen. Reheat with a splash of broth if necessary. Adjust the thickness by mashing some beans if preferred.
