Ingredients
  

For the cake

  • 1 cup brewed coffee Use your favorite brew—the bolder, the better!
  • 2 cups all-purpose flour Sift for a light texture; gluten-free blend can be used as a substitute.
  • 1.5 cups granulated sugar Brown sugar can be used for a caramel depth.
  • 2 tsp baking powder Ensure it’s fresh for optimal rising.
  • 0.5 tsp salt Enhances flavors.
  • 0.5 cups unsalted butter (softened) If using salted butter, omit extra salt.
  • 3 large eggs Room temperature eggs work best.
  • 2 tsp vanilla extract Adds warmth and comfort.

For the frosting

  • 1 cup heavy cream For a luxurious frosting; half-and-half can be used for fewer calories.
  • 2 cups powdered sugar Sift for a smooth finish.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  • In a mixing bowl, whisk together the flour, baking powder, and salt.
  • In another bowl, cream the softened butter and sugar until fluffy, about 3-5 minutes.
  • Beat in the eggs one at a time, ensuring they are thoroughly incorporated.
  • Stir in the vanilla extract.
  • Gradually add the dry mix to the wet, alternating with the brewed coffee. Start and end with the flour mix.
  • Divide the batter evenly between the two pans and smooth the tops.

Baking

  • Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  • Remove from the oven and let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

Frosting

  • Whip the heavy cream until soft peaks form, gradually adding in the powdered sugar until fluffy.
  • Frost the top of one cake layer, add the second layer on top, and frost the top and sides.
  • Optionally sprinkle cocoa powder or instant coffee on top for decoration.

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or in the fridge for up to a week. Can be frozen for up to 3 months.
