  • 1 lb ground beef or turkey Lean ground turkey is a lighter option.
  • 1 packet taco seasoning Feel free to use homemade seasoning.
  • 1 head lettuce, chopped Crisp romaine or iceberg is best.
  • 1 cup cherry tomatoes, halved Adds a sweet burst of flavor.
  • 1 cup shredded cheese A blend of cheddar and Monterey Jack is ideal.
  • 1 cup black beans, rinsed and drained Adds protein and fiber.
  • 1/2 cup diced red onion Provides a zesty kick.
  • 1 cup ranch dressing or taco sauce Choose based on your preference.

Instructions
 

Cooking the Meat

  • In a skillet over medium heat, cook the ground beef or turkey until browned. Drain any excess fat.
  • Stir in the taco seasoning along with the amount of water specified on the packet. Cook until the mixture thickens.

Combining Ingredients

  • In a large bowl, combine the chopped lettuce, cherry tomatoes, black beans, red onion, and shredded cheese.
  • Add the cooked meat mixture and Doritos to the salad bowl. Gently combine everything together.
  • Drizzle with ranch dressing or taco sauce, and toss again gently to coat.
  • Serve immediately to ensure the Doritos remain crispy.

Notes

If you have leftovers, store them in an airtight container in the fridge for up to three days. The Doritos may lose their crunch. For freezing, separate the components, freezing meat and beans but keeping salad fresh.
