St. Patrick's Day Breakfast Sweet Potato

  • 1 large large sweet potato Choose one that feels firm and smooth.
  • 2 slices slices of bacon Thick-cut preferred or substitute with turkey bacon.
  • 2 eggs Use free-range or organic eggs for better flavor.
  • 1/2 cup shredded cheese Sharp cheddar recommended, but any favorite cheese will do.
  • to taste salt and pepper Essential for seasoning.
  • optional olive oil Can be used to rub the sweet potato before baking.
  • optional chives for garnish Adds color and a mild onion flavor.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash the sweet potato thoroughly and poke several holes in it with a fork.
  • Optionally rub the sweet potato with olive oil and sprinkle with salt.

Baking

  • Bake the sweet potato for about 45 to 60 minutes, until tender.

Cooking the Meat and Eggs

  • In a skillet, cook the bacon until crispy. Set aside and crumble.
  • Fry the eggs in the same skillet to your preferred doneness.

Assembly

  • Once the sweet potato is roasted, cut it open and fluff the inside with a fork.
  • Layer the shredded cheese, crumbled bacon, and fried eggs on top of the sweet potato.
  • Season with salt and pepper to taste, and garnish with fresh chives if desired.

Notes

For variations, consider drizzling maple syrup for sweetness or swapping toppings for a Mediterranean twist.
